Review La Maison De Huile, Aoc -Corsica Olive Oil By ChefShop.com / La Maison de l'Huile d'Olive:

500 ML Corsica - now in a cool tin - Gold Medal Winner Patrick Bartoli's La Maison de l'Huile d'Olive, "House of Olive Oil" is located near the town of Olmeto on Corsica's southwest coast. Here on his estate he grows the Zinzala variety of olive - a variety that is only grown on the French island of Corsica - and produces an amazing cold pressed extra virgin olive oil. A mild climate allows a late harvest of mature olives which give this olive oil a fruity and mild taste, reflected in its name: "Fruitée Douce". One of the most fragrant oils we've ever experienced, it is characterized by freshness and fully developed herbal aromas of rosemary and "maquis" - a dense, fragrant underbrush of oak, juniper, thorn, heather, and wild herbs and flowers that covers much of the island. Patrick Bartoli's Zinzala olives produce an oil of unbelievable fruitiness that words cannot fully express. It is smooth, silky and buttery with undertones of walnuts, hazelnuts, and cacao. This oil has earned the famous French olive oil A. O. C. label - certification for quality, origin, low acidity and strict mode of fabrication. [+]
It is pressed mechanically in a modern mill designed to respect a 100% natural oil making tradition. This extra virgin Corsican olive oil will add delicious flavors to grilled fish and meat, salads, cooked vegetables and pasta or can be simply enjoyed with bread and cheese. It would also be perfect for creating an arugula pesto or even a parsley pesto.

Review Organic Italian White Truffle Oil by ChefShop.com / ChefShop:

Giuseppe Cagnoni uses an all-natural process to infuse his Etruria Late Harvest Organic Extra Virgin Olive Oil (2006 pressing) with the aromatic essence of white truffles - the white truffles from Alba in Piedmonte get all the press, but most white truffles come from the central Italian Appenines including areas in the north of Umbria where Giuseppe gets his truffles. The pungent, earthy bouquet is unmistakable, as is the intensity of the somewhat garlicky white truffle flavor, which lasts through a long finish. Giuseppe's smooth oil is a perfect match for the aromatic white truffle.

Review Pietrantica farm / OPERA PRIMA OLIVE OIL (2006) by ChefShop.com

  • Great over fish, seafood and, of course, in pesto.

  • 2006 pressing -- picked and pressed the same day.

  • Model: OPERA PRIMA OLIVE OIL (2006) by ChefShop.com
Weight: 2 pounds
Ingredients: Extra Virgin Olive Oil
Price: $26.80

Review OPERA PRIMA OLIVE OIL (2006) by ChefShop.com / Pietrantica farm:

Use this light, silky olive oil - as the Ligurians do. Great over fish, seafood, and other delicate dishes, and of course, pesto. The taggiasche olives are picked by hand and pressed the same day to insure a yield extremely low in acidity. This golden olive oil with an ever-so-slight green tinge has a very light and delicate nose of ripe olives so characteristic of good olive oils made from this scarce taggiasche. It opens light and buttery on the lips and palate, refreshingly so, unlike some of the heavy oils from the south. This light buttery taste attains a hint of sweetness and almonds on the mid palate and leaves you with a clean finishand a smile. Opera Prima is produced by the Pietrantica Farm, which is located among the hills of inner Liguria in the area of Dolcedo. The groves are at a particularly high elevation for growing olives, 300 to 400 meters above sea level, which minimizes the number of parasites and the need for treatments.

Review Etruria / Etruria Organic Umbrian Olive Oil
Etruria
  • Made with passion by Giuseppe Ganoni of Eruria!
  • Hints of green olive and artichoke along with soft floral and buttery notes.
  • A must in your pantry!
  • Great olive oil for a great price.
  • Yields an oil that is fruity on the nose and mild on the palate.
  • Model: Etruria Organic Umbrian Olive Oil
Price: $25.10

Review Etruria Organic Umbrian Olive Oil / Etruria:

To talk to Giuseppe Gagnoni is to talk about olives, specifically Umbrian olives; in true Umbrian fashion he concedes nothing to the Tuscans. Portions of Umbria were conquered by the ancient Etruscans and became part of what the Romans called Etruria. Trevi is located between Assisi and Spoleto; it is a small town perched on a pyramid of a hill surrounded by miles and miles of olive groves. This is where Giuseppe Cagnoni grows his olives and where five generations of his family have made exceptional oil. University researchers have dated the rootstock for some of his trees back 1,000 years before Christ. It seems the olives where there before the Etruscans. The main olive variety planted on the Cagnoni property is Moraiolo, a specialty of Umbria. However, Moraiolo is not self-pollinating and so the property is also planted with small amounts of Frantoio and Leccino. Very little of the wonderful Moraiolo is grown in Tuscany while Leccino and Frantoio are Tuscan staples. Their groves are planted on the rugged hillside in parcels that are from 380 meters to 600 meters above sea level. [+]
Everything is done organically by hand on the farm. This yields an oil that is fruity on the nose - notes of ripe olive with hints of green olive and artichoke - and mild, softly floral and buttery on the palate. It exudes the flavor of ripe olive and has a clean finish with a moderate amount of pepper. Tis oil accentuates food, building flavor rather than intensifying it and it is an excellent everyday oil, performing well in the kitchen and at the table.

  • Model: Pianogrillo Organic Olive Oil (2006) by ChefShop.com

Review Pianogrillo Organic Olive Oil (2006) by ChefShop.com / Pianogrillo:

Without a doubt one of our favorite estate olive oils from Italy, Pianogrillo is 100% Tonda Iblea, and it is some of the best olive oil that they've ever made. This gold-green olive oil is intensely fruity on the nose, explosive even, with bold notes of green vegetable and green tomato. It opens with a rich butteryness on the lips and tongue before giving way to green olive and green vegetable. Hints of artichoke, tomato, and a spicyness at the back of the throat give this olive oil a long delightful finish. It is a full-flavored condiment olive oil with a Sicilian flair. The "Pianogrillo" farm is situated in the Chiaramonte Gulfi district of Ragusa in Eastern Sicily, Italy. The Pianogrillo farm has belonged to the Piccione family for centuries. In the current generation, Lorenzo Piccione turned the old estate into the modern "Pianogrillo" farm. The Pianogrillo farm is a biological (organic) farm in respect to EEC rules. Chemical manipulations and pesticides aren't allowed. [+]
The olive grove is cultivated with natural products and simple agricultural techniques. Harvesting for Pianogrillo is done by a particular process called "stripping off" in which each drupe is picked by hand directly from the branches. This way of harvesting is better than others in order to guarantee the best quality of the olive oil. The milling is made in the olive oil mill "Alfa Laval" of the Pianogrillo farm within 12 hours of harvesting. All of Pianogrillo's olive oils are first cold pressed, extra virgin. This is important because this procedure avoids oxidation and heating processes and results in the highest quality olive oil. The olives, a mixture of ripe and green, are pressed using the hammer method in a cold continuous system that ensures maximum flavor extraction without any degradation of the olive oil's properties. The unfiltered Pianogrillo olive oil is allowed to naturally decant for three months and always yields an acidity of less than 0. 5%.
