Oru Di Balagna, a gold colored olive oil, originates from Balagne, northwestern region of the Mediterranean Island of Corsica. Produced from centuries old olive trees its past is intertwined with the history of men. Oru di Balagna has nourished and enlightened people for generations. The olive trees - which did not know the freezing that struck the South of France killing many of the trees in 1956 - are giant and splendid. In Corsica, harvests are based on the normal rate/rhythm of the olive-tree, namely every two years. The period of harvest extends from at the beginning of December, with the pickled olives and until the end of May for Sabines. This oil is cold pressed mechanically from the Sabine olive variety, prized since antiquity and exclusively harvested in Balagne for the Co-operative's mill, Mulinu di Pratu. Without a doubt one of our favorite estate olive oils from Italy, Pianogrillo is 100% Tonda Iblea, and it is some of the best olive oil that they've ever made. This gold-green olive oil is intensely fruity on the nose, explosive even, with bold notes of green vegetable and green tomato. It opens with a rich butteryness on the lips and tongue before giving way to green olive and green vegetable. Hints of artichoke, tomato, and a spicyness at the back of the throat give this olive oil a long delightful finish. It is a full-flavored condiment olive oil with a Sicilian flair. The "Pianogrillo" farm is situated in the Chiaramonte Gulfi district of Ragusa in Eastern Sicily, Italy. The Pianogrillo farm has belonged to the Piccione family for centuries. In the current generation, Lorenzo Piccione turned the old estate into the modern "Pianogrillo" farm. The Pianogrillo farm is a biological (organic) farm in respect to EEC rules. The olive grove is cultivated with natural products and simple agricultural techniques. Harvesting for Pianogrillo is done by a particular process called "stripping off" in which each drupe is picked by hand directly from the branches. This way of harvesting is better than others in order to guarantee the best quality of the olive oil. The milling is made in the olive oil mill "Alfa Laval" of the Pianogrillo farm within 12 hours of harvesting. All of Pianogrillo's olive oils are first cold pressed, extra virgin. This is important because this procedure avoids oxidation and heating processes and results in the highest quality olive oil. The olives, a mixture of ripe and green, are pressed using the hammer method in a cold continuous system that ensures maximum flavor extraction without any degradation of the olive oil's properties. The unfiltered Pianogrillo olive oil is allowed to naturally decant for three months and always yields an acidity of less than 0. 5%.

To talk to Giuseppe Gagnoni is to talk about olives, specifically Umbrian olives; in true Umbrian fashion he concedes nothing to the Tuscans. Portions of Umbria were conquered by the ancient Etruscans and became part of what the Romans called Etruria. Trevi is located between Assisi and Spoleto; it is a small town perched on a pyramid of a hill surrounded by miles and miles of olive groves. This is where Giuseppe Cagnoni grows his olives and where five generations of his family have made exceptional oil. University researchers have dated the rootstock for some of his trees back 1,000 years before Christ. It seems the olives where there before the Etruscans. The main olive variety planted on the Cagnoni property is Moraiolo, a specialty of Umbria. However, Moraiolo is not self-pollinating and so the property is also planted with small amounts of Frantoio and Leccino. Very little of the wonderful Moraiolo is grown in Tuscany while Leccino and Frantoio are Tuscan staples. Their groves are planted on the rugged hillside in parcels that are from 380 meters to 600 meters above sea level. [+]
Everything is done organically by hand on the farm. This yields an oil that is fruity on the nose - notes of ripe olive with hints of green olive and artichoke - and mild, softly floral and buttery on the palate. It exudes the flavor of ripe olive and has a clean finish with a moderate amount of pepper. Tis oil accentuates food, building flavor rather than intensifying it and it is an excellent everyday oil, performing well in the kitchen and at the table.

TIBVRTINI oil is from the first cold pressing of freshly hand picked olives - a combination of both green and ripe organically grown olives.
